As someone who has to really watch her sodium intake, I'm thrilled that this book has turned out to be so great. I own a number of low sodium guidebooks and cookbooks, so I've become very familiar with this category. I've only tried two of the recipes so far, but each was an "out of the park" home run. The first was Just-Like-Mom's Meat Loaf, and, forgive me, Mom, but it was way better. And at 115.8 mg of sodium per serving, it was right in the sodium range that I'm looking for. It was easy to prepare, turned out to be moist with terrific texture, and had a wonderful sweet-spicy sauce. And there was plenty for meat loaf sandwiches, which is one of the best things about meat loaf, the left overs for sandwiches! The second recipe was Tasty Turkey-Stuffed Peppers, and it couldn't have been easier. Even with only one pound of turkey, you'll definitely need very large bell peppers or at least two medium sized peppers. And, again, the left overs were terrific. Another very appreciated feature is that most of the recipes don't call for a ton of ingredients, which make these recipes quick and easy, and best of all, low sodium!
